Shelley Gratzon has a Master of Arts degree in painting and has enjoyed a career doing portraits of children. She is a confessed childhood picky eater who, as an adult, turned vegetarian – only to be surprised and challenged, when becoming a mom, by her own fussy little one. Her creativity expanded into cooking healthy, kid-friendly, hidden-veggie meals to nourish and delight one’s whole family.

From the mom of one of Shelley's taste testers: My son, at age 15½ years old, had never eaten a fruit or vegetable. Actually, that may be a slight exaggeration. He has had pumpkin in pumpkin pie, banana in chocolate chip banana bread, and tomato sauce on pizza. He had always been extremely particular about what he eats, even to the point of changing his seat at the table if strawberries were placed in front of him.

Somehow Shelley persuaded him to come to her kitchen and taste whatever she was preparing. Simply put, he was thrilled. He absolutely loved the Greenie Fettuccine! He had never tasted chard; however, he requested that I make the dish for him at home.

He thoroughly enjoyed the taste testing experience, and it made him braver about expanding his palate. Thank you, Shelley. You couldn’t have found anyone as challenging as my boy!
